Get Mother Wolf's recipe: La Mortazza (Mortadella Focaccia Sandwich)

This recipe comes from Mother Wolf, the Roman-focused Los Angeles restaurant of master sfoglino (pasta legend) Evan Funke. La Mortazza is a pizza/sanwich hybrid utilizing folded focaccia to create a pouch stuffed with mortazza (Italian for mortadella), burrata, and pistachios. Aside from the 12-24 hour rest time the focaccia requires, this recipe can be thrown together without specialty equipment or much time. I made a flight of these for a picnic with friends and they were a smash hit.
