I've never tried making this cake without eggs so cannot vouch for certain, but I'd try replacing them with a mix of water, oil, and baking powder.

Use this ratio: 2 tablespoons water + 2 teaspoons baking powder + 1 teaspoon vegetable oil = 1 large egg

Out of interest, do you know why confectioners sugar (icing sugar here in the UK) as opposed to caster sugar which is what I would usually use?

Hope 24 shapes up to be a adventurous and amazing as 23 sounded! I love the idea of having the same cake to celebrate each birthday, it makes that cake really special? It's going on my "to make" list as it sounds very up my street and I will be looking out for FENNEL GELATO!?!

Love the use of almond flour and of course anything lemon. My mother in law, myself and my daughter became ‘the ladies who eat lemon sorbet’ in Santorini on a perfect summer day. The Meyer lemon is a genius product.
